Ancient grains in their “whole grain” form provide fibre, vitamins and minerals, and healthy fats. Research shows that people who eat more whole grains may have a lower risk of heart disease, stroke, diabetes, and some cancers.
Makes enough for 2 large salads.
Ingredients Grains and pulses: Ancient Greek grains of brown coarse bulgur, Sour trahanas and du puy Lentils. Condiment kit: red onion, Raw almonds, sunflower seeds, sesame seeds, pumpkin seed , currants, parsley and coriander Tahini yoghurt: tahini, roasted garlic, honey, lemon juice, Greek yoghurt Caper vinaigrette: Capers, cider vinegar, Olive oil, salt Candied lemon zest
Please keep in mind, the ingredients provided can make a large salad, to feed 8 people as part of a meal. The below instructions is for a salad for a family of four (half of the kit).
In a mixing bowl, place half of the grains and pulses.
To the bowl, add half of each of the condiments provided, including the caper vinaigrette. (Onion, Herbs, Nuts and seeds, Currants)
Season with a pinch of salt and mix well.
Place in the center of a bowl and top with tahini yoghurt, and candied lemon zest.
Serve and Enjoy!
