Ancient grains in their “whole grain” form provide fibre, vitamins and minerals, and healthy fats. Research shows that people who eat more whole grains may have a lower risk of heart disease, stroke, diabetes, and some cancers.
Makes enough for 2 large salads.
Ingredients
Grains and pulses: Ancient Greek grains of brown coarse bulgur, Sour trahanas and du puy Lentils.
Condiment kit: red onion, Raw almonds, sunflower seeds, sesame seeds, pumpkin seed , currants, parsley and coriander
Tahini yoghurt: tahini, roasted garlic, honey, lemon juice, Greek yoghurt
Caper vinaigrette: Capers, cider vinegar, Olive oil, salt
Candied lemon zest
Instructions
- Please keep in mind, the ingredients provided can make a large salad, to feed 8 people as part of a meal. The below instructions is for a salad for a family of four (half of the kit).
- In a mixing bowl, place half of the grains and pulses.
- To the bowl, add half of each of the condiments provided, including the caper vinaigrette. (Onion, Herbs, Nuts and seeds, Currants)
- Season with a pinch of salt and mix well.
- Place in the center of a bowl and top with tahini yoghurt, and candied lemon zest.
- Serve and Enjoy!
